Double Chocolate Anzac Biscuits

This month as we commemorate the spirit of the ANZACs we thought we would make some delicious Anzac biscuits. These delicious biscuits are thought to have been made by the wives and families of soldiers serving overseas because their ingredients would survive being transported overseas. As this month we also celebrate Easter, we added an extra twist by adding cocoa and chocolate to create our double choc creations!

Ingredients:

  • 1 cup plain flour
  • 150g dark choc bits
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • ½ cup of brown sugar
  • ¼ cup caster sugar
  • 2 tbl spoons cocoa powder
  • 125g butter
  • 2 tbl spoons of golden syrup
  • 2 tble spoons of water
  • ½ teaspoon of bicarb soda
  • 150g dark chocolate melts

Anzac Biscuits Method:

  1. Preheat oven to 160oC and line two baking trays with grease-proof paper
  2. Combine flour, choc bits, oats, coconut, sugar, and cocoa powder in a bowl
  3. Stir button, golden syrup, and water over medium heat in a small saucepan
  4. Once mixture is smooth, add bicarb soda
  5. Add the wet mixture to the dry ingredients and mix well
  6. Roll tablespoons of the mixture into balls and place 5cm apart on baking tray
  7. Flatten biscuits until about 1cm thick
  8. Bake for 15 minutes until crisp, set aside to cool

Chocolate Sauce Method:

  1. Place a heatproof bowl over a saucepan of simmering water
  2. Ensure the water doesn’t touch the bottom of the bowl, place choc bits in bowl
  3. Stir choc bits as they begin to melt, until fully liquefied
  4. Dip a spoon into the melted mix and drizzle over biscuits until satisfied
  5. Enjoy!
