Apricot Energy Balls!

Growing little bodies need lots of nutrients to help develop them and give them long lasting energy throughout the day. These tasty little dairy-free treats are delicious and will give your children a burst of energy! They are also super easy to make and a fun family activity.

Ingredients:

  • 1 cup almonds
  • 1 ½ cups shredded coconut
  • 1 cup chopped dried apricots
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla essence/vanilla extract
  • Plus a little extra shredded coconut in a bowl for rolling the balls in

Method:

  1. Blend the almonds in a food processor, until they are blended into a fine powder
  2. Add in the shredded coconut and process for another 20 seconds
  3. Add the apricots, coconut oil, honey and vanilla, and process until there are no visible apricot lumps
  4. If the mixture is too dry, add in a little bit more coconut oil or honey. If it’s too moist, add more shredded coconut
  5. Roll into balls and roll them in the coconut to coat
  6. Place them in the fridge for a couple of hours
  7. Enjoy!!
